if you already have a datablock created, right click the block name in your Object Navigator and select the "Layout Wizard" option.

If you have just added an item to a datablock, click F4 on your keyboard and the properties window should display. In there, scroll down to the "canvas" category under the heading called "Physical" and you should be able to select a canvas from your existing canvases.
